Upon first mixing, your dough will look like a lumpy mess of flours. As you knead it, it will gradually smooth out. By the time your dough is fully kneaded, it should be smooth and tacky to touch.

To do this, tear off a chunk of dough and stretch it between your fingers. If the dough tears, you haven`t developed enough gluten and it needs more kneading. If it stretches without breaking, making a windowpane of sorts, you`re done and you can let the dough rest.

Set the bread machine to the “dough only” setting. The machine will combine the ingredients, knead the dough, and give it its first rise. When the bread machine beeps, it means the dough is ready to shape.
You can use all-purpose flour in place of bread flour, but all-purpose`s lower protein content means it may yield a slightly wetter dough or batter.
The dough isn`t proofed adequately.

Most recipes require bread dough to be proofed for 40 minutes to 1 hour. Although this seems like a very long period, it`ll give your bread that desirable fluffiness. Make sure you`re following the directions to avoid getting a heavy, dense bread.

You haven`t put in enough elbow grease.

The center of the dough can often be wet while the outside is dry. Give the dough a little extra kneading, just until it comes together, and that alone might be enough to fix it. If using a stand mixer, try finishing the dough by hand.

Bread flour is also set apart from other types of flour because it requires significant kneading to create a good gluten structure, which results in the airy and chewy texture.
Move the dough (either in the bread machine pan or to another bowl) to a warmer location. This might hasten the rising process.
Bread machine yeast or instant yeast are added directly to the flour and there is no need to activate these.

Too little water, and the bread will be tough. It`s also essential to use water that`s the proper temperature: The water has to be warm enough to “activate” the yeast and cause the dough to rise, but not so hot that the water kills the yeast. The ideal range is between 105º and 110ºF.
Bread makers really, really vary by make and model. But the main thing you need to know is that bread makers, generally, are machines that knead, rise, and bake your bread for you. All you have to do is dump your ingredients in and let the machine do all the hard work.
Water is a common ingredient, but since many people use the timer on their bread machines, most recipes call for non-fat dry milk or powdered buttermilk. However, if you are mixing your dough right away, you can certainly use fresh milk. Simply replace the water with milk or buttermilk and omit the powdered milk.
